Pumpkin Spice Latte Pancakes

Combine flour, sugar, baking powder, pumpkin pie spice, and salt in a bowl.

In a separate bowl, whisk together milk, pumpkin puree, espresso, egg, and vanilla extract.

Add wet ingredients to dry ingredients and mix until just combined.

Heat a non-stick pan over medium heat and add a small amount of butter or oil.

Pour 1/4 cup of batter onto the pan and cook until bubbles form on the surface, then flip and cook for an additional minute.

Serve with whipped cream, maple syrup, and a sprinkle of pumpkin pie spice.
